Lives in the fridge Monday–Thursday, comes out Friday morning for weekend baking. ## Feeding schedule | Day | Action | | --- | --- | | Friday 07:30 | Out of fridge, feed 1:2:2 (starter:water:rye flour) | | Friday 19:00 | Mix dough — 800 g flour (650 wheat / 150 rye), 560 g water, 18 g salt | | Saturday 09:00 | Shape, second proof in the banneton | | Saturday 13:00 | Bake 25 min lid on at 250°C, 20 min lid off at 230°C | | Sunday evening | Feed Gunnar, back into the fridge | ## Bake log - **18–19 Jan:** First proper loaf of the year. Dense crumb — proofed too cold on the balcony-adjacent counter. Took a photo for the bake log. - **1–2 Feb:** Much better. Moved the proof to the oven with the light on. - **8–9 Feb:** Tried 20% spelt. Crowd (me) pleased. Next experiment: overnight cold retard in the fridge before baking.
